What's for dinner? :)

    I’m ready for a new WFD thread. :) What’s on your menu tonight? Or this week if you’ve got it figured out already.

    For us so far I have:
    * chicken enchiladas (tonight, yum! Haven’t made this in a while)
    * brinner
    * hot dogs (roasted over our fire pit :))
    * coconut chicken fingers

    Planning to make pasty pies for dinner tonight, probably chicken tomorrow, but I don’t know how I will cook it yet!

    Tonight we had wings and fries at a local restaurant. Last night was copycat Outback potato soup, tomorrow will either be taco soup or chicken and pasta salad.

    This week I’ve been challenging myself to use what we have! I spent about $40 on Friday on fresh items, and I’ll need to buy some bread today, but that’s it. I really stockpiled the groceries this winter with all the storms and being snowed in, so it’s time to clear it out.

    Monday was breakfast burritos, hashbrowns, and apple slices.

    Last night was grilled chicken, corn, and mac and cheese. I love grilling and not freezing to death again!

    Tonight I’m feeling lazy so it’s going to be grilled cheese sandwiches, salad, and whatever else catches my eye in the kitchen.

    Tomorrow I’m going to grill cheeseburgers and red potatoes, and probably fix some green beans.

    Probably something on the grill – like Magster said – it is so nice to be able to grill and not be freezing~

    I have had a wicked headache most of the week so it was frozen pizza here! Total gourmets here ;)

    We had some leftover pizza but I’m still hungry. Off to the kitchen….

    I’m grilling chicken again tonight, since it tasted so delicious last week! I’ll probably just throw together a salad and whatever else I can find. We eat a lot of salad around here, if you can’t tell. :) It’s the easiest way to get nice raw greens into my kid!

    Tonight we’re having baked tilapia (lemon pepper) and zucchini fritters.
    Magster, we eat a lot of salad, too! I love that my boys will finally eat it. I think feeding giraffes at the zoo made eating lettuce cool. ;)

    Tonight we have baked tortelli alfredo, some crusty bread and a caesar salad.

    I’m craving something greasy and unhealthy, so tonight it’s grilled bacon and cheese stuffed burgers (so, so yummy!), fries, and green beans.

    Tonight I’m going to a Seder so DH and the boys are going to have a quick, easy dinner (chicken quesadillas and salad) before their gym class.

    Tonight we had pasta with roasted tomatoes and bell peppers.

    A seder is a Jewish meal for Passover, right?

    Tonight I made bowtie pasta, broccoli, and chicken breast I cut up and cooked tossed in olive oil, garlic, basil, and parsley. Then topped with parm. It was so easy and soooo yummy! Morgan went from informing she didn’t like her chicken that way, she didn’t want her broccoli in it, wah, wah, wah to eating every single bite and literally applauding me for making such a tasty dinner. :)

    Yep, a seder is a Passover meal.

    Last night I made Pioneer Woman’s Chicken Spaghetti for the dozenth time but i tweaked the recipe to balance out the carbs/protein (since I like to eat lower carb). I used 8 oz of whole wheat spaghetti and 3 c. of cooked chicken and the final recipe had 28 gm protein and 29 gm carbs per serving! (The 9×13 casserole dish=8 servings.)
