Ethan and I will be making his cupcakes later today for his Christmas Eve and Christmas evening dessert. Tomorrow, I’ll make brownies for everyone else to have for Christmas dinner dessert. I’m still considering muffins for breakfast, but since I’ll have to make two separate batches I’m not 100% sure it will happen.
I am at work right now, but when I get home we will be baking Irish Cream Cake, cookies, and pies! Then me and my daughter will be attempting to put together a gingerbread carousel! (I never put together a gingerbread house! LOL!)
1box cake mix
1 large egg
1/4 cup water
1/4 cup oil
beat until well blended. (at this point you can add a cup of candies, nuts ect)
heat oven to 350 and cook for 15 minutes.
drop by teaspoonfuls onto greased cookie sheet
***a few tips**
some brands of cake batter will give you a stiff enough dough that you can roll them into balls without making a mess, if you can, do it, it makes for prettier cookies. also, i have found the store brands work just as well and taste just as good.
if you think your batter is too dry (esp if you mixed by hand) WAIT!!!! dont add more water just yet, stick your hand in there and knead it around a little bit, sometimes this helps.
you dont need alot of grease. too much will make your cookies flat.
also, dont go with just the traditional choclate or yellow cake mix (though these ARE delicious) if you’re into that kind of thing Lemon and nuts or strawberry w/ choclate chips are also super yummy.
